Pickled Cherry & Orange Mojito

Ingredients:

  • 2 oz white rum

  • 1 oz fresh lime juice

  • 1 oz pickled cherry and orange juice (from the jar)

  • 1 tsp raw honey or agave syrup

  • 2 pickled orange slices

  • 4 pickled cherries

  • Sprig of Mint

  • Club soda

  • Ice

Instructions:

  • In a glass, muddle the pickled orange, pickled cherries, and mint leaves with honey (if using) and lime juice.

  • Add the white rum and pickled cherry and orange juice, then stir.

  • Fill the glass with ice and top with club soda.

  • Garnish with fresh basil leaves and a slice of pickled orange and 2 pickled cherries.

  • Serve as a refreshing, slightly tangy cocktail perfect for summer. 

Pickled Cherry & Orange Chicken Salad Sandwich

Ingredients:

  • 5 oz can of White Chicken Breast

  • 1/4 cup of pickled cherries (chopped)

  • 4 Pickled Orange Slices

  • 2 pieces of celery (chopped)

  • 2 leaves of romaine lettuce

  • 1 tbsp Basil Citrus Pickled Cherry Brine

  • 2 tbsp light mayo

  • 2 slices of Multigrain or sourdough bread (toast if you like an extra crunch!)

  • Sea salt and Fresh black pepper, to taste

Instructions:

  • Add drained canned chicken, chopped pickled cherries, chopped celery, light mayo, Pickle brine, mayo, and seasoning to a bowl and mix well.

  • Add your chicken salad mixture to one side of your bread then layer your orange slices and lettuce on top before putting on the second piece of bread to close the sandwich.

  • Cut in half and enjoy a creamy tangy crunchy spin on a a classic chicken salad sandwich!

  • Meats: Prosciutto, salami, or smoked sausage

  • Nuts: Salted almonds, marcona almonds, or pecans

Instructions:

  • Place slices of pickled basil and orange on your charcuterie board as a sweet, tangy contrast to the savory items.
