Pickled Peach & Basil Mojito

Ingredients:

  • 2 oz white rum

  • 1 oz fresh lime juice

  • 1 oz pickled peach juice (from the jar)

  • 1 tsp raw honey or agave syrup

  • 2 pickled peaches, pickled basil leaves, and pickled orange rinds

  • Club soda

  • Ice

Instructions:

  • In a glass, muddle the pickled peaches, basil leaves, and pickled orange rinds with honey (if using) and lime juice.

  • Add the white rum and pickled peach juice, then stir.

  • Fill the glass with ice and top with club soda.

  • Garnish with fresh basil leaves and a slice of pickled peach.

  • Serve as a refreshing, slightly tangy cocktail perfect for summer. 

Pickled Peach Prosciutto & Burrata Sandwich

Ingredients:

  • 2 slices whole-grain bread or ciabatta rolls

  • 4 slices Prosciutto

  • 8 oz of Burrata

  • 4 pickled peaches, chopped

  • Fresh basil leaves

  • 1 tbsp olive oil or balsamic glaze (optional)

Instructions:

  • Spread burrata cheese, add pickled peach slices, fresh basil leaves and prosciutto in between the bread slices.

  • Drizzle with olive oil or balsamic glaze for an extra layer of flavor.

  • Serve as a hearty sandwich for lunch, or cut into halves and serve as a light snack or appetizer.
