Curry Style Pickled Cauliflower Yogurt Salad

Ingredients:

  • 1 cup plain Greek yogurt (or plain plant-based yogurt)

  • 1 cup thinly sliced cucumber (Persian or English cucumber preferred)

  • 2–3 tbsp of your pickled curry cauliflower & carrots, finely chopped or sliced

  • 1 tbsp pickling brine (optional, for extra tang)

  • 1 tbsp fresh mint or cilantro, finely chopped

  • 1 tsp olive oil

  • Pinch of salt

  • Fresh black pepper, to taste

  • Optional: pinch of ground cumin or sumac for extra flavor

  • Optional: chili flakes or Aleppo pepper for garnish

Instructions:

  1. Prepare cucumbers:
    If using large cucumbers, deseed before slicing. Lightly salt the cucumber slices and let them sit for 5 minutes, then pat dry (this helps keep the salad from getting watery).

  2. Mix the yogurt base:
    In a bowl, whisk together the yogurt, olive oil, salt, black pepper, and optional brine. Add cumin or sumac if using.

  3. Assemble the salad:
    Fold in the sliced cucumbers and chopped pickled vegetables. Add fresh mint or cilantro.

  4. Garnish & serve:
    Drizzle with a bit more oil and a sprinkle of chili flakes or extra herbs. Serve chilled.

Curry Style Pickled Cauliflower Rice Bowl

Ingredients:

  • 1 cup of cooked basmati or jasmine rice

  • 1/2 cup of pickled cauliflower and shaved carrot

  • 1/2 cup roasted chickpeas or tofu

  • 2 tbsps of pickled cauliflower curry brine

  • 2 sprigs of cilantro

  • Optional: pita bread

Instructions:

  1. Add cooked rice to a bowl.

  2. Mix vegetables, brine, and spices in a bowl before adding them on the cooked rice.

  3. Drizzle olive oil and fresh cilantro on top.

  4. Serve with pita on the side!
